Roof to Table
Since opening Paradiso, Chef Rinaldi has been committed to supporting local
growers and purveyors. In 2011, she and her husband Chef Corey Baver, built a
garden on the rooftop of their E. Passyunk Avenue restaurant. Bounty from the
garden includes a variety of heirloom tomatoes, zucchini blossoms, strawberries,
raspberries, beets, radishes, leeks and herbs. During the growing season, these
become an integral part of the menu at Paradiso and Izumi.
Local beekeeper, Trey Fleming of Urban Apiaries approached Lynn and Corey to host
his hives and provide the restaurant with his artesian honey. This is a natural
partnership given their commitment to using locally produced products.
In 2011, in support of the Pennsylvania Horticultural society, Paradiso created a
summer salad using ingredients from PHS pops up garden. A portion of the proceeds
of the sale from dish were donated to support City Harvest , an organization that
feeds local homeless families.
Lynn Rinaldi
Lynn Rinaldi began her restaurant career as a teenager in South Philly. Her
interest in the business, led to the opening of a successful café at The
Pennsylvania Academy of Fine Arts. Wanting to further her knowledge and skills,
she attended the Restaurant School at Walnut Hill College. When a building
became available in South Philly, Lynn jumped at the opportunity to bring her
fresh approach to regional Italian cuisine back to her beloved neighborhood. By
opening Paradiso, Lynn helped kick off the emergence of Passyunk Avenue as
The Restaurant Row of South Philadelphia. In 2008, Lynn and her husband,
Chef Corey Baver opened , Izumi, a popular Japanese restaurant, also on E
Passyunk Avenue. She sits on the Board of the East Passyunk Avenue Business
Improvement District and is an active and charitable neighbor in South
Philadelphia.
Corey Baver
Corey Baver, a native of Berks County Pennsylvania, began working in
restaurants while studying International Relations at West Chester University.
Starting as a dishwasher at Tyme, a family owned restaurant in West Chester,
Corey explored his interest in cooking and became a line cook. He took his new
found curiosity to various restaurants in Berks County before returning to
Philadelphia to begin his formal culinary training at The Restaurant School at
Walnut Hill College. Upon graduation, he worked at landmark Philadelphia
restaurants The White Dog Café and the Philadelphia Fish Company. Corey had
the opportunity to explore various cuisines and further his education by working
in the Starr Restaurant Organization at acclaimed restaurants Buddakhan and
Alma deCuba where he worked with celebrated chefs Michael Schulson and
Jose Garces. An affection for South Philadelphia led him to the kitchen at
Paradiso where he met and wed Chef Lynn Rinaldi. His experience with and love
for Asian Fusion cuisine are apparent at Izumi, the restaurant that he and Lynn
opened in 2008.
